Lomo doblado de bellota 100% ibérico
Piezas únicas, hechas a mano con el cerdo ibérico de nuestras dehesas, ajo, sal y aceite de oliva como únicos ingredientes.

Desde el corazón de Extremadura llega esta receta tradicional que ha sobrevivido intacta al paso del tiempo. Un lomo con un mayor tiempo de curación, que lleva su aroma y sabor al siguiente nivel. Ideal para disfrutar con un vino suave y un buen queso semi curado.

El origen del lomo doblado se encuentra en las antiguas matanzas que se hacían en las casas extremeñas y se reservaba la pieza para consumo familiar. Su elaboración parte de lomo de peso de 1.8 a 2 kg adobado con ajo, sal y aceite de oliva. Se dobla por la mitad hasta que quedan los dos extremos unidos, formando una pieza la mitad de corta y de doble de grosor a la inicial. Se ata con cuerdas de manera manual y se
van apretando mensualmente -durante 5 meses-. Una vez finalizado el tiempo de curación se cubre con manteca de cerdo ibérico.
